Ingredients

  • 6 croissants halved
  • 6 slices turkey bacon
  • 2 tablespoon (30 ml) s unsalted butter
  • 1/4 cup (60 ml) half and half
  • Kosher salt
  • Freshly ground black pepper
  • 6 slices extra sharp cheddar cheese


Instructions

  1. Set your oven to 350°F and prepare a baking tray with parchment paper, then put it aside.
  2. Cut the croissants in half and arrange them on the lined baking tray. Place in the oven and lightly toast them for 5-10 minutes, ensuring they become golden but not overly crispy.
  3. Fry the turkey bacon until it becomes crispy, either in a skillet or on another tray in the oven.
  4. Over high heat, let the butter melt completely in a skillet until it bubbles vigorously and becomes very hot.
  5. Crack the eggs into a bowl, add the half and half, and season generously with salt and pepper.
  6. Pour the egg mixture into the hot, buttery skillet. Lower the heat to medium right away, stirring with a spatula to break up the eggs while they cook.
  7. Once the eggs are a soft golden brown and still a bit tender, remove the skillet from the heat.
  8. Place a cheese slice on the bottom half of each toasted croissant, leaving them on the tray for further baking.
  9. Lay a piece of bacon over the cheese on each croissant.
  10. Evenly distribute the scrambled eggs among the bottom halves of the croissants.
  11. Return the tray to the oven, letting everything bake for 10-15 minutes until it’s warm and appetizing, with the cheese melting over the croissants.
  12. Take the sandwiches out of the oven and enjoy them right away!
