Ingredients
- 2 sweet potatoes, diced (2.5 cups or 600 g)
- 2 (411 g) cans diced stewed tomatoes with chili seasonings
- 1 (227 g) can tomato sauce
- 180 ml diced sweet onion
- 120 ml chopped celery
- 120 ml water
- 15 ml chili powder
- 5 ml ground cumin
- 5 ml ground cinnamon
- 1 pinch salt
- 1 pinch ground black pepper
- 1 pinch cayenne pepper
- 1 pinch garlic powder
- 1 pinch onion powder
- 227 g ground beef

- 1 (340 g) can black beans, drained and rinsed
- 240 ml corn
Instructions
- Put the diced sweet potatoes, cans of stewed tomatoes, tomato sauce, chopped onion, celery, water, chili powder, cumin, cinnamon, salt, black pepper, cayenne, garlic, and onion powder into a slow cooker. Set it to high and let it cook, stirring every so often, for 5 hours.
- In a large pan over medium-high heat, combine the ground beef. Stir and cook until the meat is crumbly, browned evenly, and no longer pink, which should take about 10 to 15 minutes. Remove and discard any extra grease.
- Combine the cooked ground beef, drained black beans, and corn with the sweet potato mixture in the slow cooker; let it cook for an additional 1 to 2 hours until the flavors meld together. Serve it hot.
