Ingredients

  • – 1 pound (454 g) lean ground beef
  • – 1/4 cup (60 ml) panko breadcrumbs
  • – 1 large egg, beaten
  • – 2 teaspoons (10 ml) ketchup
  • – 1 teaspoon (5 ml) Dijon mustard
  • – 1/2 teaspoon (3 ml) dried oregano
  • – 1 teaspoon (5 ml) kosher salt
  • – 1 tablespoon (15 ml) vegetable oil (for the skillet)
  • – 2 tablespoons (30 ml) unsalted butter
  • – 2 tablespoons (30 ml) flour
  • – 1 1/2 cups (360 ml) beef broth
  • – 1 tablespoon (15 ml) ketchup
  • – 1 teaspoon (5 ml) soy sauce
  • – 1/2 teaspoon (3 ml) onion powder
  • – 6 ounces (170 g) sliced cremini mushrooms
  • – Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine all the steak ingredients (except the oil) until well blended.
  2. Form the mixture into four oval patties, each about 3/4 inch thick.
  3. Heat the vegetable oil in a large nonstick skillet over medium-high flame; place the patties in and cook for around 3 minutes on each side until they develop a golden crust (lower the heat if they brown too quickly). Move them to a plate.
  4. Turn the heat down to medium, and in the same pan with the remaining drippings, add the butter. Once it has melted, stir in the flour and mix until smooth and lump-free.
  5. Lower the heat to medium-low and pour in the beef broth, stirring thoroughly. Incorporate the ketchup, soy sauce, and onion powder, stirring to mix.
  6. Add the mushrooms, and let the mixture simmer for roughly 5 minutes until it thickens. Season with salt and pepper to your preference.
  7. Return the partially cooked patties to the skillet, immersing them in the sauce; cover and cook for an additional 10 minutes until thoroughly cooked (internal temperature should reach 160 degrees F).
  8. Serve the patties on a bed of mashed potatoes, topped with the mushroom sauce.
