Ingredients
- – 1 tablespoon (15 ml) olive oil
- – 2 lbs (900 g) lean ground beef
- – 1 yellow onion, chopped
- – 1 red bell pepper, chopped
- – 1 green bell pepper, chopped
- – 2 jalapeños, chopped
- – 5 cloves garlic, minced
- – 1 (28 oz / 800 g) can crushed tomatoes
- – 1 (15 oz / 425 g) can petite diced tomatoes
- – 1 cup (240 ml) beef broth
- – 3 tablespoons (45 ml) tomato paste
- – 1 teaspoon (5 ml) hot sauce, I used Texas Pete
- – 1 (15 oz / 425 g) can kidney beans, drained and rinsed
- – 3 tablespoons (45 ml) chili powder
- – 2 teaspoons (10 ml) dried oregano
- – 1 teaspoon (5 ml) cumin
- – 1 1/2 teaspoons (7.5 ml) salt
- – 1/2 teaspoon (2.5 ml) black pepper
- – Pinch of cayenne pepper
- – 1 packet Stevia
Instructions
- In a large pot or dutch oven on medium-high heat, cook the lean ground beef, breaking it apart with a spoon, until it is browned. Remove any excess liquid and set the beef aside on a plate lined with paper towels.
- Pour some olive oil into the heated pan and add the chopped onion, red and green bell peppers, and jalapeños. Cook for about 3 to 4 minutes until the onion becomes see-through and the peppers soften. Add in the minced garlic and continue to cook for another 30 seconds.
- Return the cooked beef to the pot, then incorporate the remaining ingredients. Bring the mixture to a boil. Lower the heat and cover, letting the chili simmer for around 30 minutes to an hour, stirring from time to time to prevent sticking.
- Serve the chili in bowls, garnish with your preferred toppings, and savor the dish!

- Try using smoked paprika for a smokier flavor instead of chili powder.
- Add a tablespoon of brown sugar or maple syrup for a touch of sweetness.
