Ingredients

  • – 1 pound (454 g) lean ground beef
  • – 1 cup (240 ml) diced onion
  • – ½ cup (120 ml) diced orange bell pepper
  • – ¼ teaspoon (1.25 ml) red pepper flakes
  • – 1 teaspoon (5 ml) Montreal Steak seasoning or Magic Dust seasoning (see recipe below)
  • – 16 ounces (454 g) tomato sauce
  • – 10 ounces (283 g) can of diced tomatoes & green chiles
  • – 1 ½ teaspoon (7.5 ml) dried oregano
  • – 2 teaspoon (10 ml) chili powder
  • – 2 cups (480 ml) frozen corn
  • – 2 ounces (57 g) shredded Mexican 4 Cheese blend
  • – 1 ½ cups (360 ml) dried macaroni style pasta cooked al dente
  • – 1 cup (240 ml) shredded Mexican 4 Cheese blend
  • – sliced green onions for garnish
  • – ½ cup (120 ml) fruit juice
  • – ¼ cup (60 ml) salt substitute
  • – ¼ cup (60 ml) sugar
  • – 2 tablespoons (30 ml) mustard powder
  • – ¼ cup (60 ml) chili powder
  • – ¼ cup (60 ml) ground cumin
  • – 2 tablespoons (30 ml) ground black pepper
  • – ¼ cup (60 ml) granulated dried garlic
  • – 2 tablespoons (30 ml) cayenne pepper


Instructions

  1. Preheat the oven to 325°F and coat a two-quart casserole dish with nonstick spray.
  2. In a large pan, cook the ground beef until browned, along with the onions, bell pepper, and red pepper flakes. Sprinkle with seasoning.
  3. Stir in the tomato sauce, diced tomatoes, oregano, and chili powder, then bring to a low boil.
  4. Lower the heat and let it cook gently for 15-20 minutes.
  5. Mix in the frozen corn and continue to simmer for a few additional minutes. Turn off the heat and blend in 2 ounces of cheese until it has melted.
  6. Carefully incorporate the cooked macaroni into the mixture.
  7. Transfer the entire mixture into the prepared casserole dish and sprinkle the remaining shredded cheese on top.
  8. Place in the oven and bake uncovered for 20-30 minutes, or until the top is golden and bubbly.
  9. Optionally, sprinkle with sliced green onions for garnish before serving.
  10. Combine all ingredients thoroughly and store them in an airtight container, keeping some in a shaker for grilling.
