- 1 cup (240 ml) Beef Broth
- 1 teaspoon (5 ml) White Sugar
- 1 teaspoon (5 ml) Chili Flakes
- 2 tablespoon (30 ml) Tomato Paste
- 2 cups (480 ml) Coconut Milk
- 1 tablespoon (15 ml) Flour
- 1/2 cup (120 ml) Chopped Parsley
- 8 oz (225 g) Beef Pasta (cooked al dente)
- 1 teaspoon (5 ml) Smoked Paprika
- 1 teaspoon (5 ml) Garlic Powder
- 1 teaspoon (5 ml) Sugar
- Salt & Pepper (to taste)
- Freshly Grated Parmesan (optional)
Instructions
- Prepare the Ingredients: Finely chop the garlic and cut the cherry tomatoes into halves.
- Warm the Garlic: In a large skillet, warm 4 tablespoons of olive oil over medium heat. Add the minced garlic and a pinch of salt. Cook until the garlic turns golden and aromatic, around 5 minutes.
- Soften the Tomatoes: Incorporate 3 cups of cherry tomatoes and another pinch of salt. Cook for 10-15 minutes, stirring now and then, until the tomatoes become tender and juicy.
- Deglaze the Skillet: Pour in 1 cup of beef broth, allowing it to simmer for approximately 5 minutes. Mix in 1 teaspoon of chili flakes and 2 tablespoons of tomato paste, ensuring everything is combined.
- Add the Creaminess: Pour in 2 cups of coconut milk and stir. In another small bowl, combine 1 tablespoon of flour with 2 tablespoons of water to form a smooth mixture. Gradually add this to the sauce to thicken it, cooking for 5-10 minutes, stirring occasionally.
- Season & Mix: Add ½ cup of chopped parsley, 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, and season with salt and pepper to your liking. Combine with the cooked beef pasta, making sure it stays firm to avoid overcooking.
