Ingredients

  • 8 Garlic Cloves (minced)
  • 3 cups (710 ml) Cherry Tomatoes (halved)
  • 4 tablespoon (60 ml) Olive Oil
  • 1 cup (240 ml) Beef Broth
  • 1 teaspoon (5 ml) White Sugar
  • 1 teaspoon (5 ml) Chili Flakes
  • 2 tablespoon (30 ml) Tomato Paste
  • 2 cups (480 ml) Coconut Milk
  • 1 tablespoon (15 ml) Flour
  • 1/2 cup (120 ml) Chopped Parsley
  • 8 oz (225 g) Beef Pasta (cooked al dente)
  • 1 teaspoon (5 ml) Smoked Paprika
  • 1 teaspoon (5 ml) Garlic Powder
  • 1 teaspoon (5 ml) Sugar
  • Salt & Pepper (to taste)
  • Freshly Grated Parmesan (optional)

Instructions

  1. Prepare the Ingredients: Finely chop the garlic and cut the cherry tomatoes into halves.
  2. Warm the Garlic: In a large skillet, warm 4 tablespoons of olive oil over medium heat. Add the minced garlic and a pinch of salt. Cook until the garlic turns golden and aromatic, around 5 minutes.
  3. Soften the Tomatoes: Incorporate 3 cups of cherry tomatoes and another pinch of salt. Cook for 10-15 minutes, stirring now and then, until the tomatoes become tender and juicy.
  4. Deglaze the Skillet: Pour in 1 cup of beef broth, allowing it to simmer for approximately 5 minutes. Mix in 1 teaspoon of chili flakes and 2 tablespoons of tomato paste, ensuring everything is combined.
  5. Add the Creaminess: Pour in 2 cups of coconut milk and stir. In another small bowl, combine 1 tablespoon of flour with 2 tablespoons of water to form a smooth mixture. Gradually add this to the sauce to thicken it, cooking for 5-10 minutes, stirring occasionally.
  6. Season & Mix: Add ½ cup of chopped parsley, 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, and season with salt and pepper to your liking. Combine with the cooked beef pasta, making sure it stays firm to avoid overcooking.
  7. Complete the Cooking: Allow the pasta to simmer in the sauce for an extra 5 minutes. Take it off the heat, cover with a lid, and let it sit for 5 minutes to blend the flavors.
  8. Present: Top with freshly grated Parmesan, additional parsley, and a dash of black pepper. Enjoy your meal!

Notes

  • Consider using beef broth with a higher fat content for a richer flavor.
  • Enhance the smokiness by using smoked paprika with a pinch of cayenne pepper.
  • Adjust the sweetness level by adding a touch more sugar if desired.
