  • – 4 ounces (113g) cream cheese
  • – 1/3 cup (80ml) salsa
  • – 1/2 teaspoon (3 ml) cumin
  • – 1 teaspoon (5 ml) chili powder
  • – 1 teaspoon (5 ml) garlic powder
  • – 1 tablespoon (15 ml) lime juice
  • – 1/4 teaspoon (1 ml) salt
  • – 2 cups (450g) cooked and shredded beef
  • – 1 cup (113g) shredded cheddar cheese
  • – 1 tablespoon (15 ml) finely chopped green onion
  • – 2 tablespoons (30 ml) finely chopped cilantro
  • – 8-10 small flour tortillas


Instructions

  1. Set your oven to 425°F and get a baking tray ready by covering it with foil and lightly coating it with cooking spray. Put it aside for now.
  2. Warm the cream cheese in the microwave for 15-20 seconds to soften it. In a mixing bowl, blend together the cream cheese, salsa, cumin, chili powder, garlic powder, lime juice, and salt.
  3. Incorporate the cooked and shredded beef, shredded cheddar cheese, chopped green onion, and chopped cilantro into the mixture. Mix thoroughly until everything is evenly distributed.
  4. Place roughly 3 tablespoons of the beef mixture about an inch from the edge of each small flour tortilla. Roll them up tightly and position them seam-side down on the prepared baking tray.
  5. Repeat the process for each tortilla, ensuring they are spaced about an inch apart without touching.
  6. Bake in the oven for 15-20 minutes or until the edges of the tortillas are slightly golden brown. Serve with sour cream, ranch dressing, or your preferred sauce.
