Description

Delicious cinnamon rolls made with a rich dough, cinnamon filling, and topped with cream cheese frosting, perfect for any occasion.

Ingredients

  • 1 1/4 cups (300 ml) whole milk, warmed to about 110 degrees
  • 2 1/4 tsp active dry yeast
  • 1 tsp granulated white sugar (to bloom the yeast)
  • 4 3/4 cups (593 g) all-purpose flour, spooned and leveled
  • 1 1/2 tsp salt
  • 2 tbsp (25 g) granulated white sugar
  • 2 eggs, whisked
  • 1 tbsp vanilla
  • 1/2 cup (112 g) unsalted butter, very softened
  • 1 cup (220 g) light brown sugar, packed
  • 2 tbsp cinnamon
  • 1/4 tsp salt
  • 1/3 cup (116 g) honey
  • 1/2 tbsp vanilla

Instructions

  1. Warm the whole milk gently and monitor the temperature with an instant-read thermometer.
  2. Sprinkle the active dry yeast and a teaspoon of granulated white sugar into the warm milk and set aside for about 10 minutes until frothy.
  3. In a large mixing bowl, combine the flour, salt, and remaining sugar.
  4. Incorporate the bloomed yeast into the flour mixture, along with the whisked eggs, softened butter, and vanilla; mix until a sticky dough forms.
  5. Knead the dough for about 5-7 minutes until smooth and elastic, adding more flour if necessary.
  6. Transfer the dough to a greased bowl, cover, and let rise in a warm environment until doubled in size, about 1 to 2 hours.
  7. Punch down the risen dough and roll it out onto a floured surface into a large rectangle, about 1/4 inch thick.
  8. Prepare the filling by mixing light brown sugar, cinnamon, and salt in a bowl and spreading it evenly over the rolled-out dough.
  9. Drizzle honey over the filling and spread the remaining softened butter on top.
  10. Roll the dough tightly from one end to the other to form a cylinder.
  11. Cut the rolled dough into 1 to 1.5-inch-wide sections and place them in a greased baking dish.
  12. Let the rolls rise again for 30-45 minutes before baking them at 350°F (175°C) for 20-25 minutes until golden brown.
  13. For softer rolls, pour heavy cream between them before baking.

Notes

Use room temperature ingredients for best results. If desired, add chocolate chips or nuts to the filling for variations.
