Description

Ingredients

  • 1 cup wild rice
  • 1 cup cranberries (fresh or dried)
  • 2 leeks (chopped)
  • Fresh or dried herbs (like thyme or parsley)
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt (to taste)
  • Pepper (to taste)


Instructions

  1. Rinse the wild rice under cold water to remove any impurities and excess starch.
  2. In a pot, heat olive oil over medium heat. Add the chopped leeks and sauté until soft.
  3. Add the rinsed wild rice to the pot and stir for about a minute.
  4. Pour in the vegetable broth and bring to a boil.
  5. Once boiling, reduce heat to low, cover, and let simmer until rice is tender, about 45 minutes.
  6. After cooking, stir in the cranberries and herbs. Season with salt and pepper to taste.
