Ingredients
- 1 cup wild rice
- 1 cup cranberries (fresh or dried)
- 2 leeks (chopped)
- Fresh or dried herbs (like thyme or parsley)
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt (to taste)
- Pepper (to taste)
Instructions
- Rinse the wild rice under cold water to remove any impurities and excess starch.
- In a pot, heat olive oil over medium heat. Add the chopped leeks and sauté until soft.
- Add the rinsed wild rice to the pot and stir for about a minute.
- Pour in the vegetable broth and bring to a boil.
- Once boiling, reduce heat to low, cover, and let simmer until rice is tender, about 45 minutes.
- After cooking, stir in the cranberries and herbs. Season with salt and pepper to taste.
- Serve warm as a side dish.
