Description

A delightful Southern appetizer featuring sweet Vidalia onions baked with a medley of cheeses and crispy breadcrumbs.


Ingredients

  • 4 large Vidalia onions, sliced into rings
  • 1 cup Italian cheese blend, shredded
  • 1 cup cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 cup breadcrumbs
  • 2 eggs
  • 1/2 cup milk
  • Salt and pepper to taste
  • Olive oil for drizzling


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Whisk together eggs and milk in a bowl until well combined.
  3. Combine breadcrumbs, salt, pepper, and half the Italian cheese blend in another bowl.
  4. Dip onion rings first into the egg mixture, then coat with the breadcrumb mixture.
  5. Place the coated onion rings on a baking sheet.
  6. Top with the remaining Italian cheese blend, cheddar cheese, and Parmesan.
  7. Drizzle lightly with olive oil.
  8. Bake for 25-30 minutes or until golden and crispy.

Notes

For extra crispiness, increase the oven temperature to 400°F (200°C) for the last few minutes of baking.
