A delightful Southern appetizer featuring sweet Vidalia onions baked with a medley of cheeses and crispy breadcrumbs.
Ingredients
- 4 large Vidalia onions, sliced into rings
- 1 cup Italian cheese blend, shredded
- 1 cup cheddar cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 cup breadcrumbs
- 2 eggs
- 1/2 cup milk
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- Whisk together eggs and milk in a bowl until well combined.
- Combine breadcrumbs, salt, pepper, and half the Italian cheese blend in another bowl.
- Dip onion rings first into the egg mixture, then coat with the breadcrumb mixture.
- Place the coated onion rings on a baking sheet.
- Top with the remaining Italian cheese blend, cheddar cheese, and Parmesan.
- Drizzle lightly with olive oil.
- Bake for 25-30 minutes or until golden and crispy.
- Serve warm and enjoy!
Notes
For extra crispiness, increase the oven temperature to 400°F (200°C) for the last few minutes of baking.
