- 3 cloves garlic, minced
- 1 tablespoon (15 ml) (15 milliliters) soy sauce
- 1 tablespoon (15 ml) (15 milliliters) vegetable oil
- 1 teaspoon (5 ml) (5 grams) ground ginger
- 1 teaspoon (5 ml) (5 grams) ground coriander
- 1 teaspoon (5 ml) (5 grams) ground cumin
- 1 teaspoon (5 ml) (5 grams) salt
- 1/2 teaspoon (3 ml) (2.5 grams) black pepper
- 2 tablespoons (30 ml) (30 grams) brown sugar
- 1 tablespoon (15 ml) (9 grams) cornstarch
- 2 tablespoons (30 ml) (30 milliliters) water
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the lamb cubes to the skillet and brown on all sides.
- Transfer the browned lamb to the slow cooker.
- In the same skillet, add chopped onion and minced garlic; sauté until softened.
- Add the onion and garlic to the slow cooker.
- Pour in the pineapple juice over the lamb mixture in the slow cooker.
- Add the diced fresh pineapple to the slow cooker.
- Stir in the soy sauce, ground ginger, ground coriander, and ground cumin.
- Season with salt and black pepper.
- Add the brown sugar and stir everything to combine.
- Cover the slow cooker with its lid.
- Cook on low heat for 6-8 hours or until the lamb is tender.
- In a small bowl, mix the cornstarch with water to form a slurry.
- About 30 minutes before serving, stir the cornstarch slurry into the slow cooker.
- Continue cooking until the sauce thickens.
- Taste and adjust seasoning if necessary.
- Serve the tender pineapple lamb hot.
