Ingredients
4 cup (960 ml) s froz en tater tots
1 pound (454 g) breakfast beef sausage
3 tablespoon (45 ml) s all-purpose flour
2 cup (480 ml) s milk
Salt and black pepper to taste

Shredded cheddar cheese
Chopped green onions

Instructions
1. Heat the oven and prepare the frozen tater tots as per the package directions until they are crisp.
2. In a pan, cook the breakfast beef sausage until it is browned and crumbly, then remove the extra fat, leaving 2 tablespoons in the pan.
3. Add the flour and cook for 2 minutes while stirring. Slowly add the milk while whisking, and let it simmer until the gravy becomes thick. Add salt and pepper to taste.
4. To serve, place the tater tots in each bowl and pour the beef sausage gravy on top. Optionally, you can add shredded cheddar cheese, chopped green onions, and fried eggs.
Notes
1. For a creamier gravy, use whole milk and whisk continuously to prevent lumps.
2. If you prefer a milder gravy, reduce the amount of black pepper or omit it entirely.
3. To save time, prepare the sausage gravy while the tater tots are baking.
