Ingredients
- Rice paper wrappers
- Rice noodles
- Mixed vegetables (carrots, bell peppers, cabbage)
- Soy sauce (or tamari for gluten-free option)
- Sesame oil
- Fresh herbs (cilantro, mint)
- Salt and pepper to taste
Instructions
- Soak rice paper wrappers in warm water until pliable.
- In a bowl, mix cooked rice noodles with diced mixed vegetables, soy sauce, sesame oil, and fresh herbs.
- Place a spoonful of the mixture onto a rice paper wrapper, fold in the sides, and roll tightly to create a secure roll.
- Preheat the air fryer to 375°F (190°C).
- Lightly spray noodle rolls with cooking oil before placing them in the air fryer basket.
- Cook for 8-10 minutes or until crispy and golden brown.
- Serve hot with a dipping sauce of your choice.
