Taco stuffed peppers filled with ground beef, rice, black beans, and vibrant spices, offering a delicious and hearty meal.
Ingredients
- 6 bell peppers
- 1 onion, diced
- 1 lb lean ground beef
- 14.5 oz can diced tomatoes
- 18 oz can black beans, drained & rinsed
- 15 oz can corn, drained & rinsed
- 2 cups cooked brown rice
- 1 1/2 cups shredded cheddar jack cheese
- 1 taco seasoning packet
- 2 tsp garlic powder
- 1 tsp chili powder
- Salt and black pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Wash and halve the bell peppers, removing the seeds, and place them in a baking dish.
- Drizzle the halved peppers lightly with olive oil and bake for 5 minutes.
- Sauté the diced onion in a skillet over medium heat with olive oil, garlic powder, chili powder, salt, and black pepper until the onion is soft.
- Add the ground beef to the skillet and cook until browned.
- Mix in the diced tomatoes, black beans, corn, brown rice, and taco seasoning, combining everything evenly.
- Stuff each pepper generously with the filling.
- Cover the baking dish with foil and bake for about 10 minutes.
- Remove the foil and sprinkle shredded cheese on top of each pepper.
- Bake uncovered for an additional 15 minutes or until the cheese is melted.
Notes
You can customize the filling with different proteins or vegetables, and serve with a side salad or tortilla chips.
