Description

Taco stuffed peppers filled with ground beef, rice, black beans, and vibrant spices, offering a delicious and hearty meal.


Ingredients

  • 6 bell peppers
  • 1 onion, diced
  • 1 lb lean ground beef
  • 14.5 oz can diced tomatoes
  • 18 oz can black beans, drained & rinsed
  • 15 oz can corn, drained & rinsed
  • 2 cups cooked brown rice
  • 1 1/2 cups shredded cheddar jack cheese
  • 1 taco seasoning packet
  • 2 tsp garlic powder
  • 1 tsp chili powder
  • Salt and black pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Wash and halve the bell peppers, removing the seeds, and place them in a baking dish.
  3. Drizzle the halved peppers lightly with olive oil and bake for 5 minutes.
  4. Sauté the diced onion in a skillet over medium heat with olive oil, garlic powder, chili powder, salt, and black pepper until the onion is soft.
  5. Add the ground beef to the skillet and cook until browned.
  6. Mix in the diced tomatoes, black beans, corn, brown rice, and taco seasoning, combining everything evenly.
  7. Stuff each pepper generously with the filling.
  8. Cover the baking dish with foil and bake for about 10 minutes.
  9. Remove the foil and sprinkle shredded cheese on top of each pepper.
  10. Bake uncovered for an additional 15 minutes or until the cheese is melted.

Notes

You can customize the filling with different proteins or vegetables, and serve with a side salad or tortilla chips.
