Ingredients
- 1 lb ground beef or turkey
- 1 onion, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 can (15 oz) tomato sauce
- 1 packet taco seasoning
- 2 cups chicken or beef broth
- Salt and pepper, to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions, avocado
Instructions
- In a large pot over medium heat, brown the ground meat with the chopped onion until cooked through, about 5-7 minutes. Drain any excess fat.
- Add the black beans, kidney beans, corn, diced tomatoes with their juices, tomato sauce, and taco seasoning. Stir to combine.
- Pour in the chicken or beef broth and stir again. Bring to a simmer.
- Let the soup cook for 20-30 minutes, stirring occasionally, and season with salt and pepper to taste before serving.
- Ladle the soup into bowls and top with optional toppings like cheese or avocado.
Notes
For a spicier version, add fresh jalapeños or cayenne pepper. You can also substitute the meat with more beans for a vegetarian option.
