Description

A comforting and hearty taco soup filled with savory flavors, perfect for chilly evenings and family gatherings.


Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) tomato sauce
  • 1 packet taco seasoning
  • 2 cups chicken or beef broth
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions, avocado


Instructions

  1. In a large pot over medium heat, brown the ground meat with the chopped onion until cooked through, about 5-7 minutes. Drain any excess fat.
  2. Add the black beans, kidney beans, corn, diced tomatoes with their juices, tomato sauce, and taco seasoning. Stir to combine.
  3. Pour in the chicken or beef broth and stir again. Bring to a simmer.
  4. Let the soup cook for 20-30 minutes, stirring occasionally, and season with salt and pepper to taste before serving.
  5. Ladle the soup into bowls and top with optional toppings like cheese or avocado.

Notes

For a spicier version, add fresh jalapeños or cayenne pepper. You can also substitute the meat with more beans for a vegetarian option.
