  • 2 teaspoons (10 ml) baking powder (8 grams)
  • 1/2 teaspoon (3 ml) baking soda (2 grams)
  • 1/4 teaspoon (1 ml) salt (1.5 grams)
  • 1 teaspoon (5 ml) ground cinnamon (2 grams)
  • 1/2 teaspoon (3 ml) ground nutmeg (1 gram)
  • 1/4 cup (60 ml) granulated sugar (50 grams)
  • 2 large eggs
  • 1 cup (240 ml) milk (240 milliliters)
  • 1/4 cup (60 ml) melted butter (57 grams)
  • 1 teaspoon (5 ml) vanilla extract (5 milliliters)

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, and granulated sugar. Mix well.
  3. In another bowl, whisk together the mashed sweet potatoes, eggs, milk, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients.
  5. Stir the mixture until just combined, being careful not to overmix.
  6. Lightly grease the waffle iron with non-stick spray or a small amount of butter.
  7. Pour an appropriate amount of batter into the preheated waffle iron, depending on its size.
  8. Close the waffle iron and cook until the waffles are golden brown and crisp.
  9. Carefully remove the waffles from the iron and place them on a wire rack.
  10. Repeat the process with the remaining batter.
  11. Serve the sweet potato waffles warm with your choice of toppings.

Notes

  • Consider enhancing the flavor by adding a touch of maple syrup or honey to the batter.
  • Incorporate chopped nuts or dried fruits to improve the texture of the waffles.
  • For a spicier taste, mix in a pinch of cayenne pepper or ginger into the dry ingredients.
