Ingredients

  • 6 medium sweet potatoes (about 1.5 kg), peeled and chopped
  • 1 tablespoon (15 ml) minced fresh ginger
  • 2 cups vegetable stock (475 ml)
  • 1 cup water, or as needed (240 ml)
  • 1 lime, juiced
  • 2 cups coconut milk, or as needed (475 ml)


Instructions

  1. Position the sweet potatoes and ginger in a large pot. Add vegetable stock and water, then bring the mixture to a boil. Lower the heat to medium-low, cover the pot, and let it gently cook until the sweet potatoes are tender, which should take approximately 30 minutes.
  2. Blend the potato mixture along with the lime juice using a food processor or an immersion blender until it’s smooth. Transfer the soup back into the pot and incorporate the coconut milk, heating it until it is thoroughly warmed.

Notes

  • For a smoother texture, add extra coconut milk while blending.
  • Adjust the ginger quantity to your taste preference.
