Ingredients
- 6 medium sweet potatoes (about 1.5 kg), peeled and chopped
- 1 tablespoon (15 ml) minced fresh ginger
- 2 cups vegetable stock (475 ml)
- 1 cup water, or as needed (240 ml)
- 1 lime, juiced
- 2 cups coconut milk, or as needed (475 ml)
Instructions
- Position the sweet potatoes and ginger in a large pot. Add vegetable stock and water, then bring the mixture to a boil. Lower the heat to medium-low, cover the pot, and let it gently cook until the sweet potatoes are tender, which should take approximately 30 minutes.
- Blend the potato mixture along with the lime juice using a food processor or an immersion blender until it’s smooth. Transfer the soup back into the pot and incorporate the coconut milk, heating it until it is thoroughly warmed.

- For a smoother texture, add extra coconut milk while blending.
- Adjust the ginger quantity to your taste preference.
- Fresh lime juice adds a burst of flavor if squeezed right before serving.
