Ingredients
- 1 tablespoon (15 ml) olive oil
- 1 cup (240 ml) chopped onion
- 1 cup (240 ml) chopped celery
- 1 cup (240 ml) chopped carrot
- 1 cup (240 ml) chopped button mushrooms
- 1 cup (240 ml) chopped sweet potato
- 2 garlic cloves, minced
- 1 teaspoon (5 g) sea salt (+ more to taste)
- 1 teaspoon (1 g) dried thyme
- 1 teaspoon (1 g) dried basil
- 1 teaspoon (1 g) dried oregano
- 1 cup (200 g) green or brown lentils
- 1 cup (200 g) red lentils
- 4 cups (960 ml) vegetable broth
- 2 cups (480 ml) water
- 1/4 cup (60 ml) tomato paste
- 1 cup (240 ml) almond milk (or coconut milk depending on your preference)
- 1 tablespoon (15 ml) lemon juice
- 2 – 3 cups (60 g – 90 g) spinach
Instructions
- Warm the oil in a large pot or Dutch oven. Introduce the onions and garlic, and cook until aromatic, around 3 minutes. Incorporate the celery, carrot, sweet potato, and mushrooms, cooking for about 5 minutes until they begin to soften. Sprinkle with salt, spices, and herbs, and continue cooking for about 2 minutes.
- Mix in the lentils and saute for 1-2 minutes, then pour in the broth, water, and tomato paste. Stir until the tomato paste is fully blended. Allow the soup to reach a boil, then cover and let it simmer gently for 30 minutes.
- Take the pot off the heat and mix in the almond milk, lemon juice, and spinach, stirring until the spinach wilts. Serve right away with your choice of garnishes.
- For toppings, consider adding a spoonful of coconut yogurt, a sprinkle of fresh parsley, red pepper flakes, cracked black pepper, and slices of jalapeno for a touch of heat and creaminess.
