Ingredients
- 5 lbs (680 g) Sweet Potatoes, peeled and chopped
- 1/2 tsp (3 ml) Italian Seasoning Blend
- Sea salt and pepper, to taste
- 1 tbsp (15 ml) Olive Oil
- 1 Medium Yellow Onion, diced
- 5 lbs (680 g) Lean Beef Meat
- 2 tbsp (30 ml) Tomato Paste
- 3-4 Garlic Cloves, minced
- 1/2 tsp (3 ml) Dried Oregano
- 1 tbsp (15 ml) Smoked Paprika
- 1 cup (240 ml) Beef Broth
- 1 cup (240 ml) Frozen Peas, or any other veggies like corn, carrots, defrosted
Instructions
- Set your oven temperature to 375°F.
- In a large pot, place the peeled and chopped sweet potatoes and add enough water to submerge them. Heat until boiling and continue cooking until they are soft, approximately 10 minutes.
- After draining, mash the sweet potatoes and add salt, pepper, and the Italian seasoning blend for flavor.
- In a spacious nonstick skillet, warm the olive oil over medium-high heat. Add the diced onions and cook for 3-4 minutes, then incorporate the minced garlic, cooking for another minute.
- Introduce the lean beef into the pan, breaking it apart with a wooden spoon as it cooks until fully browned.
- Mix in the tomato paste, dried oregano, smoked paprika, salt, pepper, and beef broth. Let this mixture simmer for a few minutes until the liquid reduces slightly, then add the thawed peas.
- Transfer the beef mixture into a 2-quart baking dish, ensuring an even layer. Spoon the mashed sweet potatoes over the top, smoothing it to cover the meat.
- Place in the oven and bake until the top begins to develop a light golden color, around 25-30 minutes. Let it sit for a bit before serving. Enjoy your meal!
