Ingredients

  • 5 lbs (680 g) Sweet Potatoes, peeled and chopped
  • 1/2 tsp (3 ml) Italian Seasoning Blend
  • Sea salt and pepper, to taste
  • 1 tbsp (15 ml) Olive Oil
  • 1 Medium Yellow Onion, diced
  • 5 lbs (680 g) Lean Beef Meat
  • 2 tbsp (30 ml) Tomato Paste
  • 3-4 Garlic Cloves, minced
  • 1/2 tsp (3 ml) Dried Oregano
  • 1 tbsp (15 ml) Smoked Paprika
  • 1 cup (240 ml) Beef Broth
  • 1 cup (240 ml) Frozen Peas, or any other veggies like corn, carrots, defrosted


Instructions

  1. Set your oven temperature to 375°F.
  2. In a large pot, place the peeled and chopped sweet potatoes and add enough water to submerge them. Heat until boiling and continue cooking until they are soft, approximately 10 minutes.
  3. After draining, mash the sweet potatoes and add salt, pepper, and the Italian seasoning blend for flavor.
  4. In a spacious nonstick skillet, warm the olive oil over medium-high heat. Add the diced onions and cook for 3-4 minutes, then incorporate the minced garlic, cooking for another minute.
  5. Introduce the lean beef into the pan, breaking it apart with a wooden spoon as it cooks until fully browned.
  6. Mix in the tomato paste, dried oregano, smoked paprika, salt, pepper, and beef broth. Let this mixture simmer for a few minutes until the liquid reduces slightly, then add the thawed peas.
  7. Transfer the beef mixture into a 2-quart baking dish, ensuring an even layer. Spoon the mashed sweet potatoes over the top, smoothing it to cover the meat.
  8. Place in the oven and bake until the top begins to develop a light golden color, around 25-30 minutes. Let it sit for a bit before serving. Enjoy your meal!
