  • 1 teaspoon (5 ml) ground cinnamon
  • 1 teaspoon (5 ml) baking soda
  • 1/2 teaspoon (3 ml) baking powder
  • 1/2 teaspoon (3 ml) salt
  • 1/2 cup chopped pecans (60 g)


Instructions

  1. Set your oven to 350°F (175°C) and prepare a muffin tin with either a light coating of oil or paper liners.
  2. In a mixing bowl, blend together the sugar, mashed sweet potato, vegetable oil, water, and beaten eggs.
  3. In another bowl, whisk the flour, cinnamon, baking soda, baking powder, and salt.
  4. Combine the dry ingredients and chopped pecans with the sweet potato mixture. Carefully mix until the ingredients are just combined, ensuring not to overmix.
