- 1/2 cup chopped pecans (60 g)
Instructions
- Set your oven to 350°F (175°C) and prepare a muffin tin with either a light coating of oil or paper liners.
- In a mixing bowl, blend together the sugar, mashed sweet potato, vegetable oil, water, and beaten eggs.
- In another bowl, whisk the flour, cinnamon, baking soda, baking powder, and salt.
- Combine the dry ingredients and chopped pecans with the sweet potato mixture. Carefully mix until the ingredients are just combined, ensuring not to overmix.
- Distribute the batter evenly into the muffin tin, filling each cup about three-quarters full.
- Place in the oven and bake until a toothpick inserted into the muffins comes out clean, approximately 20 to 25 minutes.
- Allow the muffins to cool on a wire rack.
