Ingredients

  • – 1 pound (450 g) sweet potatoes
  • – 1 cup (120 g) all-purpose flour
  • – 1/2 teaspoon (3 ml) salt


Instructions

  1. Pierce the sweet potatoes with a fork and heat them in the microwave for 7 to 10 minutes until they are soft. Slice them open, remove the insides, place them in a bowl, and mash using a fork.
  2. Add the flour and salt, stirring with a spoon initially, then using your hands to blend the mixture.
  3. Move the dough to a surface dusted with flour and knead briefly until it becomes a compact and slightly moist dough, but not sticky.
  4. Divide the dough into four parts, roll each into long strands, and cut into small, pillow-like pieces about 1/2 inch or 1 cm in size.
  5. You can cook the gnocchi as is, or press them with your thumb against a gnocchi board or fork to create ridges.
  6. Boil the gnocchi in a large pot of salted water for 1 to 2 minutes or until they rise to the top.
  7. Lift them out with a slotted spoon and serve with your chosen sauce. We suggest a simple marinara sauce with grated parmesan, a scoop of burrata, a splash of olive oil, and chopped pistachios (or use dried oregano instead of pistachios).
