Ingredients

  • – 3 cups grated sweet potato (720g)
  • – 2 eggs
  • – 1/2 cup shredded cheddar cheese (60g)
  • – 1/4 cup breadcrumbs (or all-purpose flour) (30g)
  • – 1 teaspoon (5 ml) ground cumin
  • – 1/2 teaspoon (3 ml) dried oregano
  • – 1/4 teaspoon (1 ml) salt
  • – 2 tablespoons (30 ml) vegetable oil


Instructions

  1. Peel the sweet potato and grate it using a handheld or box grater into a mixing bowl. Squeeze out any extra moisture and dry off with a paper towel to ensure the fritters turn out crispy rather than soggy.
  2. Combine the grated sweet potato with the remaining ingredients, excluding the vegetable oil.
  3. Pour the vegetable oil into a skillet. Once it’s heated, place 1/4 cup of the mixture into the pan and flatten it. Cook for 2 to 3 minutes on each side, turning once halfway through. (Ensure the oil is evenly distributed when flipping the fritters.) For smaller fritters, use 2 tablespoons of the mixture.
