Ingredients

  • 1 cup mashed sweet potatoes (240 ml)
  • 2 cups all-purpose flour (240 g)
  • 1/2 cup granulated sugar (100 g)
  • 1/4 cup brown sugar (50 g)
  • 1 teaspoon baking powder (5 g)
  • 1/2 teaspoon baking soda (2.5 g)
  • 1/2 teaspoon ground cinnamon (1.5 g)
  • 1/4 teaspoon ground nutmeg (0.5 g)
  • 1/4 teaspoon salt (1.5 g)
  • 1/2 cup milk (120 ml)
  • 1/4 cup vegetable oil (60 ml)
  • 2 large eggs
  • 1 teaspoon vanilla extract (5 ml)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a donut pan lightly with cooking spray or oil.
  3. In a large bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  4. In another bowl, mix together the mashed sweet potatoes, milk, vegetable oil, eggs, and vanilla extract until smooth.
  5. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  6. Avoid overmixing to prevent tough donuts.
  7. Spoon the batter into a piping bag or a resealable plastic bag with the corner snipped off.
  8. Pipe the batter into the prepared donut pan, filling each cavity about 3/4 full.
