Ingredients
- 1 cup mashed sweet potatoes (240 ml)
- 2 cups all-purpose flour (240 g)
- 1/2 cup granulated sugar (100 g)
- 1/4 cup brown sugar (50 g)
- 1 teaspoon baking powder (5 g)
- 1/2 teaspoon baking soda (2.5 g)
- 1/2 teaspoon ground cinnamon (1.5 g)
- 1/4 teaspoon ground nutmeg (0.5 g)
- 1/4 teaspoon salt (1.5 g)
- 1/2 cup milk (120 ml)
- 1/4 cup vegetable oil (60 ml)
- 2 large eggs
- 1 teaspoon vanilla extract (5 ml)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a donut pan lightly with cooking spray or oil.
- In a large bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
- In another bowl, mix together the mashed sweet potatoes, milk, vegetable oil, eggs, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Avoid overmixing to prevent tough donuts.
- Spoon the batter into a piping bag or a resealable plastic bag with the corner snipped off.
- Pipe the batter into the prepared donut pan, filling each cavity about 3/4 full.
- Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into a donut comes out clean.
- Allow the donuts to cool in the pan for 5 minutes.
- Carefully transfer the donuts to a wire rack to cool completely.
- Optionally, glaze or dust with powdered sugar before serving.
