Ingredients

  • 2 tablespoons (30 ml) vegetable oil
  • 1/2 large red onion, finely diced
  • 14 ounces (400g) fresh tomatoes, diced (if using canned, drain the tomatoes)
  • sea salt, about ¾ teaspoon (3.75 g) & ground black pepper, about ¼ teaspoon (1.25 g), to taste
  • 3 garlic cloves, minced
  • 1 ½ tablespoons (22.5 ml) garam masala
  • 1 teaspoon (5 ml) curry powder
  • ¾ tablespoon (11.25 ml) paprika
  • 1/4 teaspoon (1.25 ml) cumin
  • 1 cup (240 ml) cooked chickpeas
  • 1 lb (450g) beef or 3 cups (750 g), peeled and cubed into 1 inch pieces
  • 5 ounces (383g) can coconut milk*
  • juice of 1 small lime
  • 3 cups (90 g) spinach


Instructions

  1. In a large saucepan on medium-high heat, pour in the vegetable oil.
  2. Introduce the diced red onion and tomatoes. Season with sea salt and ground black pepper, then mix well. Turn the heat down to medium and let the mixture cook until the tomatoes release their juices and the onions become tender, approximately 10 minutes.
  3. Incorporate the chickpeas and beef pieces, mixing thoroughly. Add the minced garlic, garam masala, curry powder, paprika, and cumin, stirring for around 30 seconds until the spices release their aroma.
  4. Pour in the coconut milk and blend everything together. Increase the heat to bring the mixture to a boil, then lower it to medium-low to allow the curry to gently simmer for about 20 to 30 minutes, until the beef is fully cooked and tender.
  5. Mix in the spinach and drizzle lime juice over the curry, ensuring not to omit the lime. Stir to integrate. Take the curry off the heat. Sample the dish and adjust salt and pepper to your liking. Let it cool slightly and allow the spinach to wilt in the residual heat, approximately 3 minutes, then serve. Enjoy your meal!
