Ingredients

  • 2 tablespoons olive oil (30 ml)
  • 2 tablespoons maple syrup (30 ml)
  • 1/4 teaspoon (1 ml) cayenne pepper
  • 3 large sweet potatoes, peeled and cut into 1/4-inch slices
  • salt and pepper to taste


Instructions

  1. Set your oven to 450 degrees F (230 degrees C) and cover a baking tray with aluminum foil.
  2. In a small bowl, combine the olive oil, maple syrup, and cayenne pepper.
  3. Coat the sweet potato slices with this mixture and arrange them on the foil-lined tray. Add salt and pepper as desired.
  4. Place in the oven for 8 minutes, then turn the slices over, apply any leftover maple mixture, and bake until they are soft in the center and crispy around the edges, approximately 7 additional minutes.
