- 2 large eggs, beaten

- 3 tablespoons vegetable oil, softened (42 g)
- 1/2 cup chopped pecans (65 g)
Instructions
- Start by assembling your ingredients. Heat the oven to 325°F (165°C).
- For the sweet potatoes: Place them in a medium pot and submerge with water. Cook on medium-high until they are soft, around 10 to 15 minutes. Drain them and move to a big bowl.
- Use a fork to mash the sweet potatoes. Incorporate the eggs and mix well. Add in sugar, milk, vegetable oil, vanilla, and salt; stir until the mixture is smooth. Pour this into a 9×13-inch baking dish.
- For the topping: Combine brown sugar and flour in a medium bowl. Use a pastry cutter to blend in the vegetable oil until the texture resembles small peas; avoid overmixing. Mix in the pecans. Scatter this mixture over the sweet potato layer.
- Place in the oven and bake until the topping is lightly golden, approximately 30 minutes.
