Description

A warm and comforting sweet potato casserole, perfect for family gatherings with rich flavors, sweetness, and hints of cinnamon.


Ingredients

  • 6 to 8 medium sweet potatoes
  • 8 tablespoons unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup dark brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 cup orange juice
  • 1 tablespoon orange zest
  • Salt (for boiling)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and chop sweet potatoes into even pieces and boil in salted water until tender (15 to 20 minutes).
  3. Drain and mash the sweet potatoes in a large bowl.
  4. Add unsalted butter to the warm sweet potatoes and mix until melted.
  5. Incorporate granulated sugar, dark brown sugar, and ground cinnamon into the mashed potatoes.
  6. Add vanilla extract, orange juice, and orange zest, mixing until smooth and creamy.
  7. Transfer the mixture to a greased baking dish and spread evenly.
  8. Bake for 25 to 30 minutes until the top is lightly golden.

Notes

For extra flavor, consider making the sweet potato mixture a day ahead. Add marshmallows on top for a sweet finish. Adjust sweetness by varying sugar amounts.
