Ingredients
- 6 to 8 medium sweet potatoes
- 8 tablespoons unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup dark brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/4 cup orange juice
- 1 tablespoon orange zest
- Salt (for boiling)
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and chop sweet potatoes into even pieces and boil in salted water until tender (15 to 20 minutes).
- Drain and mash the sweet potatoes in a large bowl.
- Add unsalted butter to the warm sweet potatoes and mix until melted.
- Incorporate granulated sugar, dark brown sugar, and ground cinnamon into the mashed potatoes.
- Add vanilla extract, orange juice, and orange zest, mixing until smooth and creamy.
- Transfer the mixture to a greased baking dish and spread evenly.
- Bake for 25 to 30 minutes until the top is lightly golden.
Notes
For extra flavor, consider making the sweet potato mixture a day ahead. Add marshmallows on top for a sweet finish. Adjust sweetness by varying sugar amounts.
