A delicious and nutritious Sweet Potato Burger Bowl featuring lean ground beef, roasted sweet potatoes, and fresh toppings, perfect for a satisfying meal.
Ingredients
- 1 lb lean ground beef
- 2 tsp Worcestershire sauce
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp pepper
- 4 small sweet potatoes
- 1 tbsp avocado oil
- 1 bag shredded lettuce (8 oz)
- 1 red onion (thinly sliced)
- 1 pint diced tomatoes (10 oz)
- ½ cup pickles (diced)
- Special sauce
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and dice the sweet potatoes, adding them to a large bowl.
- Toss the sweet potatoes with avocado oil, garlic powder, onion powder, salt, and pepper.
- Spread them onto a lined baking sheet and place them in the oven.
- Roast for 30 to 40 minutes, tossing halfway through for even cooking.
- While the sweet potatoes roast, heat a skillet on medium heat with some oil.
- Add the ground beef and cook until browned, around 8 minutes.
- Stir in Worcestershire sauce and the remaining seasonings, mixing well.
- Once the meat and sweet potatoes finish cooking, assemble the bowls with layers of shredded lettuce, sweet potatoes, beef, red onion, tomatoes, and pickles.
- Drizzle with special sauce before serving.
Notes
For a leaner option, substitute ground turkey or chicken for the beef. Experiment with additional spices or toppings as desired.
