Description

A delicious and nutritious Sweet Potato Burger Bowl featuring lean ground beef, roasted sweet potatoes, and fresh toppings, perfect for a satisfying meal.


Ingredients

  • 1 lb lean ground beef
  • 2 tsp Worcestershire sauce
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp pepper
  • 4 small sweet potatoes
  • 1 tbsp avocado oil
  • 1 bag shredded lettuce (8 oz)
  • 1 red onion (thinly sliced)
  • 1 pint diced tomatoes (10 oz)
  • ½ cup pickles (diced)
  • Special sauce


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes, adding them to a large bowl.
  3. Toss the sweet potatoes with avocado oil, garlic powder, onion powder, salt, and pepper.
  4. Spread them onto a lined baking sheet and place them in the oven.
  5. Roast for 30 to 40 minutes, tossing halfway through for even cooking.
  6. While the sweet potatoes roast, heat a skillet on medium heat with some oil.
  7. Add the ground beef and cook until browned, around 8 minutes.
  8. Stir in Worcestershire sauce and the remaining seasonings, mixing well.
  9. Once the meat and sweet potatoes finish cooking, assemble the bowls with layers of shredded lettuce, sweet potatoes, beef, red onion, tomatoes, and pickles.
  10. Drizzle with special sauce before serving.

Notes

For a leaner option, substitute ground turkey or chicken for the beef. Experiment with additional spices or toppings as desired.
