Ingredients
- 4 cups fresh corn (or canned/frozen corn)
- 1 cup heavy cream
- 1/2 cup honey
- 1 cup sour cream
- 2 large eggs
- 1 cup shredded cheddar cheese
- 1 cup cornmeal
- 1 teaspoon baking powder
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the fresh corn, heavy cream, honey, sour cream, and eggs. Stir until well mixed.
- In another bowl, mix the cornmeal, baking powder, salt, and pepper. Gradually add this mixture to the corn mixture, stirring until just combined.
- Fold in the cheddar cheese.
- Pour the combined mixture into a greased baking dish.
- Bake for 45-50 minutes or until the top is golden brown and a toothpick inserted comes out clean.
- Let it cool slightly before serving. Garnish with chopped parsley if desired.
Notes
Use fresh corn in season for the best flavor. If using frozen corn, be sure to thaw and drain it well.
