Ingredients
- 6 medium potatoes (about 900g), peeled and cubed
- 6 stalks celery (about 250g), chopped, leaves reserved
- 1 medium onion, chopped
- 2 cubes beef bouillon
- 2 (432g) cans whole kernel corn, drained
- 60ml vegetable oil
- 1/4 cup (15g) chopped fresh chives
Instructions
- Place the cubed potatoes, chopped celery with leaves, and onion in a large saucepan. Add enough water to submerge the ingredients. Heat until it begins to boil.
- Remove the celery leaves and add the bouillon cubes, stirring until they are fully dissolved. Add the drained corn. Lower the heat to medium-low and let it simmer until the potatoes are soft, about 20 minutes.
- Stir the chopped chives into the soup and let it cook for an additional 5 minutes. Serve while warm.
