Description

Ingredients

  • 6 medium potatoes (about 900g), peeled and cubed
  • 6 stalks celery (about 250g), chopped, leaves reserved
  • 1 medium onion, chopped
  • 2 cubes beef bouillon
  • 2 (432g) cans whole kernel corn, drained
  • 60ml vegetable oil
  • 1/4 cup (15g) chopped fresh chives


Instructions

  1. Place the cubed potatoes, chopped celery with leaves, and onion in a large saucepan. Add enough water to submerge the ingredients. Heat until it begins to boil.
  2. Remove the celery leaves and add the bouillon cubes, stirring until they are fully dissolved. Add the drained corn. Lower the heat to medium-low and let it simmer until the potatoes are soft, about 20 minutes.
  3. Stir the chopped chives into the soup and let it cook for an additional 5 minutes. Serve while warm.
