Ingredients
- 565 g (1 lb 4 oz) boneless, skinless chicken breast or chicken thigh, cut into bite-sized pieces
- 1 tsp (5 ml) sweet paprika
- 1 tsp (5 ml) garlic powder
- 1/2 tsp (3 ml) sea salt flakes
- 1/2 tsp (3 ml) cracked black pepper
- 1 egg
- 1/2 cup (60 g) cornflour (cornstarch)
- Oil, for frying
- 1 tsp (5 ml) freshly minced garlic
- 1 tsp (5 ml) freshly minced ginger
- 1/2 cup (125 ml) sweet chili sauce
- 1/4 cup (60 ml) tamari or all-purpose soy sauce
- 1/4 cup (60 ml) lime juice
- Steamed rice
- 1 spring onion (scallion), finely sliced
- 1 tsp (5 ml) sesame seeds
Instructions
- Put the chicken pieces in a large mixing bowl, then add sweet paprika, garlic powder, salt, pepper, egg, and cornflour. Stir until the chicken is thoroughly coated with the mixture. Keep it aside.
- To prepare the sauce, blend all the sauce ingredients together in a separate medium-sized bowl. Set this mixture aside as well.
- In a large, deep frying pan, heat the oil over medium-high until hot. Fry the chicken pieces for 5–6 minutes, making sure to turn them over halfway, until they are fully cooked and have a golden color. Place the cooked chicken on a paper towel to absorb any extra oil.
- Remove the oil from the pan and clean it with a cloth.
- Put the pan back on medium-low heat and pour in the sauce. Stir for 2–3 minutes until it starts to bubble and becomes slightly thicker. Turn off the heat, then add the chicken back into the pan, stirring to coat it evenly with the sauce.
- Serve the chicken right away, placing it on a bed of steamed rice. Garnish with finely sliced spring onion and a dash of sesame seeds on top.
- If desired, after taking out the chicken, pour 1–2 tablespoons of boiling water into the pan and stir it into the leftover sauce. Use this extra sauce to drizzle over the completed dish.
