Description

A delightful combination of sweet and spicy flavors, these baked cauliflower bites offer a satisfying crunch and are perfect for any gathering.


Ingredients

  • 1 medium head of cauliflower, cored and cut into florets or use 25-30 store-bought cauliflower florets
  • 2 large eggs
  • 1 cup breadcrumbs (panko or gluten-free)
  • 3 tablespoons flour (all-purpose or gluten-free)
  • Kosher salt, to taste
  • Ground black pepper, to taste
  • 1 tablespoon olive oil or olive oil cooking spray
  • 4 tablespoons maple syrup or honey
  • 2 tablespoons light brown sugar or coconut sugar
  • 1 tablespoon low-sodium soy sauce or tamari
  • 1 teaspoon garlic paste or minced garlic
  • 1 teaspoon ginger paste or minced ginger
  • 1 teaspoon red chili paste or minced chili peppers
  • Chopped chives or scallions for garnish
  • Sesame seeds for garnish


Instructions

  1. Preheat the oven to 425°F.
  2. If using a whole head, core and chop cauliflower into bite-sized florets.
  3. In a bowl, whisk together the eggs, soy sauce, garlic paste, ginger paste, and red chili paste.
  4. In another bowl, combine the breadcrumbs, flour, kosher salt, and ground black pepper.
  5. Dip each cauliflower floret into the egg mixture, then coat with the breadcrumb mix.
  6. Place the coated florets on a lined baking sheet and drizzle with olive oil or cooking spray.
  7. Bake for 20-25 minutes or until golden and crispy.
  8. In a separate bowl, mix maple syrup, light brown sugar, and chopped chives or scallions.
  9. Once the cauliflower bites are golden, remove from oven and toss in the prepared sauce.
  10. Return to the oven and bake for an additional 5 minutes.
  11. Sprinkle with sesame seeds for garnish before serving.

Notes

Let the bites cool on a wire rack to retain crispiness. Experiment with various spices and dipping sauces for added flavor.
