Description
A rich and comforting banana bread featuring ripe bananas and chocolate chips, perfect for breakfast or a snack.
Ingredients
- 1 1/2 cups (180g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (115g) unsalted butter, melted and cooled
- 1/4 cup (60mL) vegetable oil
- 3/4 cup (150g) granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon pure vanilla extract
- 1 1/2 cups (360g) mashed ripe bananas (about 3-4 medium bananas)
- 1 cup (170g) semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan, lining it with parchment paper.
- In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, whisk the melted butter, vegetable oil, and sugar together until combined.
- Add the eggs to the mixture, mixing thoroughly, then add the vanilla extract.
- Fold in the mashed bananas until well integrated.
- Gently stir in the dry ingredient mixture just until no flour streaks remain.
- Finally, fold in the chocolate chips and pour the batter into the prepared loaf pan, smoothing the top.
- Bake for 50 to 60 minutes, tenting with foil if it browns too quickly. Check doneness with a skewer.
- Allow the loaf to cool in the pan before lifting it out using the parchment overhang, then let cool completely on a wire rack before slicing.
Notes
For best results, use room-temperature ingredients and ripe bananas. Store wrapped tightly to maintain moisture.
