Description
A delightful and moist banana bread filled with chocolate chips, perfect for using overripe bananas.
Ingredients
- 1 and ½ cups (180g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup (1 stick / 115g) unsalted butter, melted and cooled slightly
- ¼ cup (60ml) vegetable oil
- ¾ cup (150g) granulated sugar
- 2 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1 and ½ cups (360g) mashed ripe bananas (about 3-4 medium sized bananas)
- 1 cup (170g) semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and prepare a loaf pan with cooking spray or parchment paper.
- Whisk together the flour, baking soda, and salt in a small bowl and set aside.
- Combine the melted butter, vegetable oil, granulated sugar, eggs, and vanilla extract in a large bowl and whisk until blended.
- Fold in the mashed ripe bananas gently.
- Incorporate the dry ingredients and chocolate chips until just combined, being careful not to overmix.
- Pour the batter into the prepared loaf pan, smoothing out the top.
- Bake in the center of the oven for 50-60 minutes, until a skewer inserted comes out clean.
- Allow the banana bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
Notes
Add a dash of cinnamon or nutmeg for extra flavor. Store wrapped in plastic or foil to maintain moisture.
