Description

A delightful and moist banana bread filled with chocolate chips, perfect for using overripe bananas.


Ingredients

  • 1 and ½ cups (180g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (1 stick / 115g) unsalted butter, melted and cooled slightly
  • ¼ cup (60ml) vegetable oil
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 and ½ cups (360g) mashed ripe bananas (about 3-4 medium sized bananas)
  • 1 cup (170g) semi-sweet chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan with cooking spray or parchment paper.
  2. Whisk together the flour, baking soda, and salt in a small bowl and set aside.
  3. Combine the melted butter, vegetable oil, granulated sugar, eggs, and vanilla extract in a large bowl and whisk until blended.
  4. Fold in the mashed ripe bananas gently.
  5. Incorporate the dry ingredients and chocolate chips until just combined, being careful not to overmix.
  6. Pour the batter into the prepared loaf pan, smoothing out the top.
  7. Bake in the center of the oven for 50-60 minutes, until a skewer inserted comes out clean.
  8. Allow the banana bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

Add a dash of cinnamon or nutmeg for extra flavor. Store wrapped in plastic or foil to maintain moisture.
