Delightful strawberry pie bars with a crumbly crust and creamy filling, perfect for any summer gathering.
Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 cups granulated sugar
- Pinch of salt
- 3/4 cup chilled butter, cubed
- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup sour cream
- 1/3 cup all-purpose flour
- Pinch of salt
- 3 cups fresh diced strawberries
Instructions
- Preheat the oven to 350°F and grease a 7×11-inch baking dish.
- In a large bowl, combine 1 1/2 cups flour, 3/4 cup sugar, and a pinch of salt. Add cubed butter and blend until crumbly.
- Reserve 3/4 cup of the crust mixture for topping.
- Press the remaining crust mixture evenly into the bottom of the greased baking dish.
- Bake the crust for about 15 minutes, then let it cool slightly.
- In a separate bowl, whisk together 2 eggs, 1 cup sugar, 1/2 cup sour cream, 1/3 cup flour, and a pinch of salt until well combined.
- Gently fold in the diced strawberries.
- Spoon the strawberry filling mixture evenly over the baked crust.
- Sprinkle the reserved crust mixture on top of the filling.
- Bake for 45-55 minutes, or until the top is lightly browned and the filling is set.
- Allow to cool for one hour before cutting into bars and serving.
Notes
Use fresh strawberries for best flavor. Allow bars to cool completely for clean slicing.
