Description

Delightful strawberry pie bars with a crumbly crust and creamy filling, perfect for any summer gathering.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cups granulated sugar
  • Pinch of salt
  • 3/4 cup chilled butter, cubed
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1/3 cup all-purpose flour
  • Pinch of salt
  • 3 cups fresh diced strawberries


Instructions

  1. Preheat the oven to 350°F and grease a 7×11-inch baking dish.
  2. In a large bowl, combine 1 1/2 cups flour, 3/4 cup sugar, and a pinch of salt. Add cubed butter and blend until crumbly.
  3. Reserve 3/4 cup of the crust mixture for topping.
  4. Press the remaining crust mixture evenly into the bottom of the greased baking dish.
  5. Bake the crust for about 15 minutes, then let it cool slightly.
  6. In a separate bowl, whisk together 2 eggs, 1 cup sugar, 1/2 cup sour cream, 1/3 cup flour, and a pinch of salt until well combined.
  7. Gently fold in the diced strawberries.
  8. Spoon the strawberry filling mixture evenly over the baked crust.
  9. Sprinkle the reserved crust mixture on top of the filling.
  10. Bake for 45-55 minutes, or until the top is lightly browned and the filling is set.
  11. Allow to cool for one hour before cutting into bars and serving.

Notes

Use fresh strawberries for best flavor. Allow bars to cool completely for clean slicing.
