A stunning cake with layers of fluffy sponge, luscious custard, and fresh strawberries that captures the essence of celebration.
Ingredients
- 2 ½ cups all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter (softened)
- 1 ½ cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup milk
- 2 cups whole milk (for custard filling)
- ½ cup granulated sugar (for custard filling)
- 3 tbsp cornstarch
- 4 large egg yolks
- 2 tbsp unsalted butter (for custard filling)
- 1 tsp vanilla extract (for custard filling)
- 2 cups fresh strawberries (diced, plus whole for topping)
- Whipped cream (for decorating)
Instructions
- Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
- Whisk together the flour, baking powder, and salt in a bowl.
- Cream the softened butter and granulated sugar in another bowl until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla extract.
- Gradually alternate adding the dry mixture and milk until the batter becomes smooth.
- Divide the batter evenly into the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
- Heat the whole milk in a saucepan until warm, but do not let it boil.
- Whisk together the sugar, cornstarch, and egg yolks in a bowl.
- Pour the warm milk into the egg mixture while whisking constantly.
- Return the mixture to the saucepan and cook over medium heat, stirring until thickened.
- Remove from heat and stir in the butter and vanilla extract. Cover with plastic wrap pressed against the surface to cool.
- Slice each cake layer horizontally in half to create four thin layers.
- Place one layer on a cake plate, spread custard over it, and sprinkle with diced strawberries. Repeat for remaining layers.
- Spread custard on top and garnish with halved strawberries. Pipe whipped cream around the edges for decoration.
- Chill the cake for at least 1-2 hours before serving for the best flavor.

Using a serrated knife for slicing cake layers ensures smooth, even cuts. Chill the cake to help flavors meld together.
