Description

A stunning cake with layers of fluffy sponge, luscious custard, and fresh strawberries that captures the essence of celebration.


Ingredients

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter (softened)
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup milk
  • 2 cups whole milk (for custard filling)
  • ½ cup granulated sugar (for custard filling)
  • 3 tbsp cornstarch
  • 4 large egg yolks
  • 2 tbsp unsalted butter (for custard filling)
  • 1 tsp vanilla extract (for custard filling)
  • 2 cups fresh strawberries (diced, plus whole for topping)
  • Whipped cream (for decorating)


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  2. Whisk together the flour, baking powder, and salt in a bowl.
  3. Cream the softened butter and granulated sugar in another bowl until light and fluffy.
  4. Beat in the eggs one at a time, then add the vanilla extract.
  5. Gradually alternate adding the dry mixture and milk until the batter becomes smooth.
  6. Divide the batter evenly into the prepared cake pans.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
  8. Heat the whole milk in a saucepan until warm, but do not let it boil.
  9. Whisk together the sugar, cornstarch, and egg yolks in a bowl.
  10. Pour the warm milk into the egg mixture while whisking constantly.
  11. Return the mixture to the saucepan and cook over medium heat, stirring until thickened.
  12. Remove from heat and stir in the butter and vanilla extract. Cover with plastic wrap pressed against the surface to cool.
  13. Slice each cake layer horizontally in half to create four thin layers.
  14. Place one layer on a cake plate, spread custard over it, and sprinkle with diced strawberries. Repeat for remaining layers.
  15. Spread custard on top and garnish with halved strawberries. Pipe whipped cream around the edges for decoration.
  16. Chill the cake for at least 1-2 hours before serving for the best flavor.
