Delightful strawberry cinnamon rolls with a soft dough, luscious strawberry filling, and creamy icing, perfect for brunch or a sweet breakfast treat.
Ingredients
- 3/4 cups milk, warmed
- 1/4 cup granulated sugar
- 2 1/4 teaspoons instant yeast
- 1/3 cup butter, softened
- 2 eggs + 1 yolk
- 3 1/4 cups bread flour
- 1/2 teaspoon salt
- 2 cups strawberries, chopped
- 1/2 cup granulated sugar
- 1 teaspoon lemon juice
- 1 tablespoon cornstarch
- 1/2 teaspoon cinnamon
- 4 ounces cream cheese, softened
- 2 tablespoons butter, softened
- 1 cup powdered sugar
- 2 tablespoons strawberry filling
- 1-2 tablespoons milk or cream
Instructions
- Combine warm milk, sugar, and yeast in a stand mixer bowl and let it sit for about 10 minutes.
- Add softened butter, eggs, yolk, bread flour, and salt.
- Beat the mixture on medium speed for about 6-8 minutes until smooth.
- Grease a bowl and transfer the dough into it, covering with a kitchen towel.
- Let it rise for approximately 60 minutes until doubled in size.
- Cook strawberries, sugar, and lemon juice in a saucepan over medium heat until softened.
- Mix cornstarch with water, add it to the saucepan with cinnamon, and simmer until thickened.
- Roll the dough into a 15×10-inch rectangle and spread the strawberry filling.
- Roll the dough tightly into a log and cut into 12 equal rolls.
- Arrange the rolls in a greased baking pan and let rise for 45 minutes.
- Preheat the oven to 375°F (190°C) and bake for 20-25 minutes.
- Cool on a wire rack before icing.
Notes
For a twist, you can mix in other fruits like blueberries or raspberries.
