Description

Delightful strawberry cinnamon rolls with a soft dough, luscious strawberry filling, and creamy icing, perfect for brunch or a sweet breakfast treat.


Ingredients

  • 3/4 cups milk, warmed
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1/3 cup butter, softened
  • 2 eggs + 1 yolk
  • 3 1/4 cups bread flour
  • 1/2 teaspoon salt
  • 2 cups strawberries, chopped
  • 1/2 cup granulated sugar
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon cinnamon
  • 4 ounces cream cheese, softened
  • 2 tablespoons butter, softened
  • 1 cup powdered sugar
  • 2 tablespoons strawberry filling
  • 1-2 tablespoons milk or cream


Instructions

  1. Combine warm milk, sugar, and yeast in a stand mixer bowl and let it sit for about 10 minutes.
  2. Add softened butter, eggs, yolk, bread flour, and salt.
  3. Beat the mixture on medium speed for about 6-8 minutes until smooth.
  4. Grease a bowl and transfer the dough into it, covering with a kitchen towel.
  5. Let it rise for approximately 60 minutes until doubled in size.
  6. Cook strawberries, sugar, and lemon juice in a saucepan over medium heat until softened.
  7. Mix cornstarch with water, add it to the saucepan with cinnamon, and simmer until thickened.
  8. Roll the dough into a 15×10-inch rectangle and spread the strawberry filling.
  9. Roll the dough tightly into a log and cut into 12 equal rolls.
  10. Arrange the rolls in a greased baking pan and let rise for 45 minutes.
  11. Preheat the oven to 375°F (190°C) and bake for 20-25 minutes.
  12. Cool on a wire rack before icing.

Notes

For a twist, you can mix in other fruits like blueberries or raspberries.
