Ingredients
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup fresh strawberries, diced
- 1/2 cup shortbread cookies, crushed
- 6-8 crepes
- Whipped cream for topping
- Chocolate sauce for drizzling (optional)
Instructions
- Beat the cream cheese until smooth.
- Add powdered sugar and vanilla extract, mixing until well combined.
- Fold in the diced strawberries and crushed shortbread cookies.
- Place a crepe on a flat surface and spread a thin layer of the cheesecake mixture on it.
- Roll the crepe tightly and repeat with the remaining crepes and filling.
- Chill the rolls in the refrigerator for about 30 minutes.
