Description

A delightful loaf combining ripe bananas and fresh strawberries, perfect for any day.


Ingredients

  • ½ cup unsalted butter (softened)
  • 1 cup white sugar
  • 2 large eggs (beaten)
  • 1 cup mashed ripe bananas (about 2-3 bananas)
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1½ cups fresh strawberries (sliced and tossed in 1 tablespoon of flour)
  • 1 cup powdered sugar (for lemon glaze)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest


Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a loaf pan with nonstick spray and parchment paper.
  2. In a medium bowl, mix the dry ingredients: flour, baking powder, and salt.
  3. In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  4. Add the eggs one by one, mixing well after each addition, then incorporate the mashed bananas.
  5. Add sour cream and vanilla extract, mixing until combined.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently.
  7. Fold in the flour-coated strawberries.
  8. Pour the batter into the prepared loaf pan and bake for 15 minutes at 375°F, then reduce to 350°F (175°C) and bake for an additional 30 minutes.
  9. Allow to cool for 15 minutes in the pan before transferring to a wire rack.
  10. Once cooled, glaze with lemon glaze made from powdered sugar, lemon juice, and lemon zest.

Notes

Always choose ripe bananas for the best sweetness. Dust strawberries with flour to prevent sinking in the batter.
