Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- ¼ tsp baking soda
- ½ tsp kosher salt
- 1 tsp ground cinnamon
- 8 tbsp butter, softened
- ⅓ cup granulated sugar
- ⅓ cup brown sugar, packed
- 1 cup mashed bananas (approximately 2 bananas)
- ⅓ cup maple syrup
- 2 tsp vanilla extract
- 3 eggs
- ¾ cup buttermilk
- Toffee Sauce:
- 8 tbsp butter
- ¾ cup brown sugar, packed
- ¾ cup heavy cream
- 1 tsp vanilla extract
Instructions
- Cream together the granulated sugar, brown sugar, and butter for about three minutes until light and fluffy.
- Mix in the eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas until well combined.
- Whisk together the flour, baking powder, baking soda, kosher salt, and ground cinnamon in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined to avoid overmixing.
- Pour the batter into the prepared baking dish, evenly spreading it out.
- Bake for 45-55 minutes. Validate doneness by inserting a toothpick into the center; it should come out clean.
- Prepare the toffee sauce by melting the butter and brown sugar together over medium-low heat, stirring frequently for about ten minutes until smooth.
- Add the heavy cream and vanilla extract, cooking for another five minutes without boiling until silky smooth.
- Once the cake is slightly cooled, poke holes with a toothpick across the top. Pour the cooled toffee sauce over the cake, allowing it to soak in for at least one hour.
Notes
For added flavor, use overripe bananas and consider adding nuts like walnuts or pecans to the batter for extra crunch.
