Ingredients
- 1 cup all-purpose flour
- 1 cup pumpkin puree
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, combine the pumpkin puree, vegetable oil, eggs, sugar, and brown sugar. Stir until well blended.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fill muffin cups about 3/4 full with batter.
- Bake for 18-20 minutes, checking doneness with a toothpick inserted in the center.
- Allow cooling in the tin for a few minutes before transferring to a wire rack to cool completely.
