Description

Ingredients

  • 1 cup all-purpose flour
  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, combine the pumpkin puree, vegetable oil, eggs, sugar, and brown sugar. Stir until well blended.
  3. In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fill muffin cups about 3/4 full with batter.
  6. Bake for 18-20 minutes, checking doneness with a toothpick inserted in the center.
  7. Allow cooling in the tin for a few minutes before transferring to a wire rack to cool completely.
