Ingredients
- 2 cups mixed greens
- 1 cup shredded carrots
- 1 cup thinly sliced bell peppers
- 1 ripe mango, diced
- 1/2 cup sliced cucumbers
- 1 jalapeño, thinly sliced (optional)
- 1/4 cup fresh cilantro, chopped
- 1/4 cup green onions, chopped
- 3 tablespoons olive oil
- 1 tablespoon rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon grated ginger
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine the mixed greens, shredded carrots, thinly sliced bell peppers, diced mango, sliced cucumbers, jalapeño (if using), chopped cilantro, and chopped green onions.
