Ingredients
- 1 cup split green peas
- 1 ham bone
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken or vegetable broth
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Rinse the split peas under cold water and set them aside.
- In a large pot, sauté the onion, carrots, and celery until softened.
- Add the garlic and cook for 1 more minute.
- Stir in the split peas, ham bone, broth, and thyme.
- Bring to a boil, then reduce heat and simmer for 1-1.5 hours, or until the peas are tender.
- Remove the ham bone, shred the meat, and return it to the soup.
- Season with salt and pepper to taste.
