Description

A quick and delicious Spinach and Feta Omelet, perfect for busy mornings or leisurely brunches.


Ingredients

  • 2 large eggs
  • 1 cup fresh spinach, chopped
  • 1/4 cup feta cheese, crumbled
  • Salt and pepper, to taste
  • 1 tablespoon olive oil or butter


Instructions

  1. In a bowl, beat the eggs with salt and pepper.
  2. Heat olive oil or butter in a non-stick skillet over medium heat.
  3. Add chopped spinach to the skillet and sauté until wilted, about 1 minute.
  4. Pour the beaten eggs over the spinach, tilting the skillet to spread them evenly.
  5. Cook for 2-3 minutes until eggs are set around the edges.
  6. Sprinkle feta cheese on one half of the omelet.
  7. Fold the omelet in half and cook for another minute.
  8. Slide onto a plate and serve hot.
