Ingredients
- 2 large eggs
- 1 cup fresh spinach, chopped
- 1/4 cup feta cheese, crumbled
- Salt and pepper, to taste
- 1 tablespoon olive oil or butter
Instructions
- In a bowl, beat the eggs with salt and pepper.
- Heat olive oil or butter in a non-stick skillet over medium heat.
- Add chopped spinach to the skillet and sauté until wilted, about 1 minute.
- Pour the beaten eggs over the spinach, tilting the skillet to spread them evenly.
- Cook for 2-3 minutes until eggs are set around the edges.
- Sprinkle feta cheese on one half of the omelet.
- Fold the omelet in half and cook for another minute.
- Slide onto a plate and serve hot.
