Description

Crispy and flavorful Mexican-style street potatoes seasoned with spices and garnished with fresh cilantro.


Ingredients

  • 4 large potatoes (peeled and diced)
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • 2 cloves garlic (minced)
  • 1 tbsp lime juice
  • Fresh cilantro (chopped for garnish)


Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the diced potatoes and cook for approximately 15 minutes, stirring occasionally, until golden and crispy.
  3. Prepare a spice blend by combining salt, smoked paprika, chili powder, cumin, and cayenne pepper in a small bowl.
  4. Sprinkle the spice mix over the potatoes once they are golden.
  5. Stir the potatoes to coat them evenly with the spices.
  6. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  7. Remove from heat and drizzle with lime juice.
  8. Garnish with chopped cilantro before serving.

Notes

Rinse diced potatoes in cold water for extra crispiness. Adjust cayenne pepper for desired heat.
