Description

A comforting and flavorful dish of Spanish rice and beans, perfect for chilly evenings.


Ingredients

  • 1 cup long-grain rice
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes with green chilies
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Chopped cilantro for garnish


Instructions

  1. In a large pot, heat a small amount of oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until soft.
  3. Stir in the rice, cumin, smoked paprika, salt, and pepper, cooking for another minute to allow the spices to bloom.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
  6. Stir in the black beans and diced tomatoes, heating through.
  7. Garnish with chopped cilantro before serving.
