Ingredients

  • 1 spaghetti squash (1 kg)
  • 2 tablespoons extra-virgin olive oil (30 ml)
  • 1 onion, chopped
  • 1 large clove garlic, minced
  • 1 large zucchini, cut into bite-size pieces
  • 1 green bell pepper, chopped
  • 1 tablespoon (15 ml) dried Italian herb seasoning
  • fresh ground black pepper, to taste
  • 5 cups chopped tomato (360 ml)
  • 75 cup crumbled goat cheese (180 g)


Instructions

  1. Poke holes in the spaghetti squash using a fork and place it in a microwave-safe container; microwave on high for 12 minutes. Let it cool until it’s safe to touch.
  2. Cut the squash in half lengthwise; scoop out the seeds. Use a fork to scrape out the flesh into a large bowl, fluffing the strands to separate them as much as possible.
  3. Warm olive oil in a large pan over medium heat. Sauté the onion in the hot oil until it begins to soften, roughly 3 minutes. Add the garlic and continue to sauté for an additional 3 minutes.
  4. Incorporate the zucchini and green bell pepper into the mixture; season with Italian herb seasoning and freshly ground black pepper.
  5. Add the tomatoes to the pan and cook just until they are heated through, about 3 to 5 minutes. Combine the squash strands with the mixture in the pan and toss until well blended. Top with crumbled goat cheese and toss once more before serving.
