Ingredients
- 454 g Hatch chile peppers, halved and seeded
- 1 boneless beef roast (1.36 kg), cubed
- 480 ml all-purpose flour
- 3 tbsp (45 ml) salt, divided
- 3 tbsp (45 ml) coarsely ground black pepper, divided
- 60 ml vegetable oil
- 480 ml chicken stock
- 1 can (425 g) diced tomatoes with green chile peppers
- 1 large sweet onion, chopped
- 2 tbsp (30 ml) ground cumin
- 3 cloves garlic
Instructions
- Adjust the oven rack to be approximately 6 inches from the broiler’s heat and preheat the broiler. Cover a baking tray with aluminum foil.
- Arrange the halved chile peppers, cut-side facing down, on the foil-covered tray.
- Broil until the skins of the peppers are charred and blistered, about 5 to 8 minutes. Transfer the charred peppers to a large bowl, seal with plastic wrap, and let them steam for around 20 minutes as they cool. Peel off and discard the skins, chop the peppers finely, and set them aside.
- Place the beef cubes into a large resealable plastic bag with flour, 2 tablespoons of salt, and 2 tablespoons of black pepper. Seal the bag securely and shake to coat the beef thoroughly.
- In a skillet over medium heat, warm the oil. Sauté the beef in the hot oil until it browns, about 5 to 7 minutes, then move it to a slow cooker.
- Into the slow cooker, add the chopped peppers, chicken stock, the diced tomatoes with green chile peppers, chopped onion, cumin, the remaining 1 tablespoon of salt, the remaining 1 tablespoon of black pepper, and garlic. Stir to combine everything well.
- Set the slow cooker to cook on Low for 6 hours or on High for 4 hours, until the beef is tender and the flavors meld together.
