Ingredients
- 1 cup of rice
- 1 cup of grated coconut
- 2 tablespoons of oil
- 1 teaspoon of mustard seeds
- 1 teaspoon of urad dal
- 2 green chilies, chopped
- 1-2 dried red chilies
- 1/4 teaspoon of turmeric powder
- Salt to taste
- Fresh curry leaves
Instructions
- Cook the rice according to package instructions and set aside.
- Heat oil in a pan over medium heat and add mustard seeds and urad dal, allowing them to splutter.
- Introduce chopped green chilies, dried red chilies, and curry leaves to the pan. Sauté for about a minute until fragrant.
- Add grated coconut and turmeric powder, and cook for a few minutes, stirring often.
- Mix in the cooked rice and salt, combining all ingredients well.
- Serve hot, garnished with fresh herbs or extra coconut if desired.
Notes
Using freshly grated coconut enhances the flavor. Feel free to adjust the spices according to your heat preference.
