Description
Delicious pull-apart dinner rolls made with sourdough discard for a unique flavor and fluffy texture.
Ingredients
- 2 1/2 cups all-purpose flour
- 2 tbsp sugar
- 1 tsp salt
- 1 1/2 tsp instant yeast
- 1 cup sourdough discard
- 1/2 cup lukewarm milk
- 1 large egg
- 1/3 cup unsalted melted butter
- 1 egg yolk + 1 tsp water for egg wash (or 1 tbsp milk + 1 tsp honey for wash)
Instructions
- In a large bowl, mix all dry ingredients: flour, sugar, salt, and yeast.
- Integrate the wet ingredients: milk, melted butter, egg, and sourdough discard. Mix until a dough forms.
- Knead the dough for about 6 minutes with a stand mixer or 8-10 minutes by hand until smooth and tacky.
- Let the dough rise in a warm place for about 80 minutes, or until doubled in size.
- Deflate the dough, divide into nine pieces, shape each into a tight ball, and place in a lined baking pan.
- Let the rolls rise again for about 40 minutes while preheating the oven to 350°F.
- Brush each roll with egg wash or milk and honey wash.
- Bake for 20-25 minutes until golden brown. Let cool for 10 minutes before serving.
Notes
Ensure milk is lukewarm to activate yeast. Adjust rising times based on kitchen temperature.
